Artisanal machine for the production of breadsticks and “ciabatte” bread

The Techno machine is conceived to assure the production of several types of bakery items: from the “Stirati” and “Rubatà” breadsticks to “Ciabatte” and “Sofficini” soft bread, with a rapid change in the type of production. The whole process of load is supplied by an adjustable dough feeder and a calibrator barrel that maintain the thickness of the dough constant and improve the homogeneity of the products.
The transverse cutting system has been especially designed to eliminate any artificial trace from the product while the longitudinal cutting system has been designed to provide a fast and easy use, with the possibility to vary the pressure on the product according to the firmness of the dough.
The machine has been supplied with an extractable pressing plate that allows to produce excellent “Rubatà” breadsticks thanks to a simple adjustment of the pressure.
